Greetings all,

We had a great gig in Toronto on June 22 at the Toronto Jazz Festival -not sure who had more fun, you or us! We have a photo below of our fans giving us the finger - it’s an old loving ritual of ours.

We’ll post some more polite pictures soon.

In December of last year my mother gave me a recipe for bread that she found in the New York Times - I never used to bake bread, until I got this recipe and since December I have been baking three to four loaves a week. Try this you shall not be dissapointed it is so simple and so good!

Great Bread, No Boule! and no kneading, needed!

3 Cups of stone ground unbleached white flour
1/4 teaspoon of yeast
A little less than tablespoon of Salt
1 & 2/3 cup of tepid water
cornmeal

Equipment
1. Cast Iron or ceramic casserole pot with lid (ours is 5 inches tall by 10 inches wide)

Hello - we bid you welcome to Manteca’s new website.

There’s good stuff all around, so make yourself at home. Be sure to listen to a few cuts from our new record “Onward!” Watch our new video to see Manteca in the studio, hear Matt Zimbel try to do a British accent, and see some retro shots of really bad 80’s hair. If you want to catch up on your Manteca history (it has been a few years), click on our biography. You’ll probably more likely want to see what we look like after all this time. For that, just visit our gallery (Don’t worry - no 80’s hair here.)

Most importantly, you are going to want to get tickets to our first show. Manteca is headlining the opening night of the Toronto Jazz Festival on June 22nd. If you’re going to be in town, we hope you’ll stop by.
